Pasta Alla Vodka

This recipe is a little special—it's one I cook straight from the heart, no measurements. If you give it a try, let me know how it turns out! ♡

Ingredients:

  • Onion - red or white, I prefer red

  • Garlic

  • Calabrian Chili Peppers *optional but a must IMO

  • Tomato Paste

  • Pasta

  • Heavy Cream

  • Butter

  • Parmesan

  • Olive Oil

  • Vodka

  • Salt

Directions:

Season a large pot or skillet with olive oil on medium heat. Add in your diced onion and season with a generous pinch of salt. Cook until the onions are soft and translucent. Add calabrian chili peppers and garlic and cook until fragrant. Next, add the tomato paste, cook and stir until almost (!!) burnt. Add a splash of vodka (my go-to is Tito’s) and stir until evaporated. Adjust the heat to low and add heavy cream, butter and parmesan. Finally, add the al dente noodles and a splash of pasta water to the sauce. Let it all boil together for about 1-2 minutes.
